Our sun-dried tomatoes are produced exclusively at our facilities in Tunisia, a region with ideal climatic conditions for natural drying. We oversee the entire process—from cultivation to drying—ensuring full traceability and top quality.

We collaborate with small agricultural cooperatives that continue to use time-honored methods passed down through generations. The process begins with the planting of traditional, fleshy tomato varieties that are naturally high in sugars. Once perfectly ripe, the tomatoes are hand-harvested and taken directly to the drying area.

How We Make Our Sun-Dried Tomatoes

In Tunisia, the drying process is carried out entirely under the sun, using artisanal methods and without any additives or preservatives. The steps we follow to achieve such a special result include:

  • 1. Tomatoes are washed and hand-cut, typically in halves.
  • 2. Lightly salted to aid dehydration and natural preservation.
  • 3. Placed on palm mats or wooden/metal racks, outdoors under the intense Tunisian sun.
  • 4. Covered with fine netting or gauze, allowing air and sunlight to pass while protecting against dust and insects.
  • 5. Dried for 3 to 5 days, until reaching the ideal texture and concentration.
